spring fruit tart
This is a simple cookie-type crust. A nice little cream cheese filling. Top it with the freshest fruits of the season, or can use drained canned fruit. I have not tried frozen, because they do not give that fresh fruit vibe. But you can try it.

How To Make spring fruit tart
-
1Put the crust ingredients into a food processor and pulse till they come together in a ball. No need to roll, just push this out into your pan evenly. You can roll of course. This makes enough for 1 two crust pies or 2 one crust pies, or one tart pan.
-
2For the tart, blind bake this for 12-15 minutes. Set aside to cool completely.
-
3Beat the whipped cream on high until it makes soft peaks. Then add sugar and whip till stiff peaks form. Set aside.
-
4In another bowl, beat the cheese with the sugar till creamy and well blended, and add in the flavorings.
-
5Stir 1/3 of the whipped cream into the cream cheese mixture. Then gently fold the remaining whipped cream into the cream cheese mixture. Then spread it into the pre-baked tart shell.
-
6Top with fresh fruit. I have used several fruits, such as strawberries, and I cut the strawberries and placed them on top.
-
7In the meantime, take a 1/4 cup jelly (not jam) in a small pan and heat till it is melted down a bit. For most fruits, I use apple jelly. It makes the fruit shiny, but this time I used strawberry jelly.
-
8Refrigerate at least 4 hours.
