September 19th is the official Talk Like a Pirate Day. I created this pie today to test out its seaworthiness in advance. The kids are underage scallywags, so rum extract was used.

Blue Ribbon Recipe

This is a unique apple pie for a fall treat. The mix of Gala apples and prunes creates a rich and fruity filling. It has a wonderful blend of cinnamon, cloves, and nutmeg spices. We liked the texture and flavor that the crumble topping adds. Drizzling a rum and powdered sugar glaze on top adds one last pop of sweetness. This simple pie makes us want to talk like a pirate EVERY day!

Ingredients For aye aye apple rum pie

  • 2 c
    pitted prunes
  • 1 + c
    water
  • 1/2 c
    granulated sugar
  • 6 md
    Gala apples
  • 2 Tbsp
    ground cinnamon, divided
  • 1/8 tsp
    ginger powder, divided
  • 1/2 tsp
    ground cloves, divided
  • 1/8 tsp
    ground nutmeg, divided
  • 2 tsp
    rum extract, divided
  • 2 c
    brown sugar, lightly packed, divided
  • 2 c
    all-purpose flour
  • 1 stick
    butter
  • 4 Tbsp
    uncooked oats, divided
  • 1
    pie crust shell
  • 3/4 c
    powdered sugar
  • milk or water, as needed

How To Make aye aye apple rum pie

  • Soak prunes in boiling water with sugar.

    Place prunes in a heavy pot and cover with 1 cup of water and 1/2 cup sugar. Bring to a simmer and cover the pot. Simmer until most of the water has been absorbed. Take from the heat, pour off the extra liquid, and mash. Put aside until time to assemble the pie.
  • Add sliced apples to a pot with water and spices to cook.

    Slice apples and put them into the heavy pot. Cover with water. Add half the cinnamon, ginger, cloves, and nutmeg. Simmer for about 15 minutes. Drain in a colander. Pour half the rum extract over the apples. Sprinkle another 1 tsp of cinnamon and half the brown sugar; toss.
  • Combine flour, butter, cinnamon, oats, and brown sugar for a crumble.

    Make a top crumble for the pie. Take flour and mix with butter, the remaining cinnamon, half of the oats, and the remaining brown sugar. Mix until at a crumb stage.
  • Add oatmeal, cooled prunes, and apple slices to a pie crust.

    Preheat the oven to 375 degrees F. In an empty pie shell, sprinkle half the oatmeal on the bottom. Spoon cooled prunes on top of the oatmeal. Add the apple slices.
  • Add the crumble topping.

    Add the crumble topping to cover the pie.
  • Bake the pie.

    Bake at 375 degrees for 40 minutes.
  • Combine milk, powdered sugar, and rum extract for a glaze.

    Mix powdered sugar and the remaining rum extract. Add water or milk by drops until the desired consistency is reached.
  • Pour glaze over the baked pie.

    Pour over the finished pie.
